How is the programme aligned?

This programme is a SAQA registered qualification aligned to unit standards.

Unit Standards

The fundamental component consists of Unit Standards to the value of 44 credits all of which are compulsory. The core component consists of Unit Standards to the value of 38 credits all of which are compulsory.

The following elective Unit Standards to a value of 51 credits have been selected:

  • US114908: Apply food and safety practices in a wholesale and retail outlet (7 Credits)
  • US120403: Apply good manufacturing practices as part of a food safety system (4 Credits)
  • US120401: Take a representative food sample (4 Credits)
  • US242781: Pack manually (4 Credits)
  • US114897: Administer deliveries (10 Credits)
  • US114897: Count stock for a stock-take (5 Credits)
  • US13172: Understand the employer/employee relationship (3 Credits)
  • US14359: Behave in a professional manner in a business environment (5 Credits)
  • US14342: Manage time and work processes within a business environment (4 Credits)
  • US15092: Plan and manage personal finances (5 Credits)

Who is the target audience?

This qualification is intended for learners who:

  • Were unable to complete their schooling
  • Have worked in the food and beverage manufacturing environment for many years, but have no formal or recognised qualifications in their area of work
  • Wish to extend their knowledge and understanding of the food and beverage manufacturing environment
  • Can be empowered to sustain themselves economically within the food industry in basic handling of food and related products to improve the quality of their lives

What are the entry requirements?

It is assumed that learners are already competent in Communication and Numeracy at ABET Level 3.

What is the purpose of the programme?

The purpose of this qualification is to contribute to increasing levels of personal and product safety and to develop a common integrated and coordinated approach to the handling of food and related products. A person acquiring this qualification will be able to understand personal and product safety, as well as acquire essential life skills relating to food handling.

This qualification serves as an entry-level qualification for food and beverage manufacturing qualifications. It also allows learners to obtain the necessary knowledge and skills for career advancement and advancement to higher qualifications in food and beverage manufacturing supervision, food and beverage quality control and assurance, food and beverage manufacturing management, food and beverage manufacturing supervision and food and beverage process artisan.

What are the learning outcomes?

The learning outcomes from the qualification exit level outcomes will enable learners to:

  • Communicate and demonstrate problem solving within a food and beverage-handling environment
  • Maintain personal and product safety in a food and beverage manufacturing environment
  • Demonstrate an understanding of life skills within a food and beverage handling context
  • Handle food
  • Carry out familiar food and beverage handling processes
  • Identify and solve problems in which responses display responsible decision making through the use of critical and creative thinking
  • Organise and manage activities responsibly and effectively
  • Collect, analyse, organise and critically evaluate information
  • Communicate and demonstrate problem solving within a food and beverage handling environment
  • Work effectively as a member of a team
  • Work under direct supervision with some responsibility and accountability

How is the programme structured?

Facilitation strategy

We offer our clients various facilitation methods based on specific needs. This can include in-person, on-line, virtual facilitation methods or a combination of any of these. Various learning techniques, such as simulations, roleplays and presentations are used. Facilitators give feedback on participation, strengths, and areas for improvement. Practical application is crucial, requiring learners to apply knowledge in their daily work under supervision.

Assessment strategy

  • Formative Assessment is conducted throughout the programme during the facilitated sessions. Assessment activities are included in the Formative Assessment Workbook and will be checked by the facilitator. Learners are expected to complete all the activities in their workbooks.
  • Summative Assessment is conducted at the end of the foundational training phase. Learners are expected to complete summative assessment activities in the workplace and complete a logbook.
  • Final Integral Assessment (FISA) is conducted at the end of the qualification and learners are only eligible for the FISA once competent for all modules. The FISA will consist of assessment of knowledge, practical and reflexive components although these may be integrated.

What are the workplace requirements?

Outcomes-based qualifications require application of skills in the workplace. For this qualification the following resources are required:

  • A work surface for food handling
  • An electrical machine and utensils used in the food handling industry
  • Personal hygiene material
  • Cleaning products and material
  • Packaging material
  • Company policies and procedures including, dress code, code of conduct and sexual harassment policies
  • Learners must be exposed to all outcomes related to the qualification; this would include all activities related cleaning, packaging, receiving and dispatching of stock.

What workplace activities will need to be completed?

  • Learners receive a logbook providing guidelines for workplace integration activities and in some cases specific workplace assignments to be conducted with evidence collection.

    Some of the practical workplace activities for this qualification include the following:

    • Clean and sanitise a work surface, electrical machine and utensil or loose component
    • Prepare a recipe/food package/order
    • Design a document outlining food storage and handling processes
    • Plan a balanced meal based on health needs and special dietary requirements
